KARDHI PAKORA IN INSTANT POT | VEGETARIAN RECIPE | INSTANT POT INDIAN RECIPE | STIR IT UP! RECIPES

Ingredients:

For kadhi:
1/2 cup besan (chickpea flour)
2.5 cups yogurt
1/2 cup water
4 round red chilies
4 diced green chilies
1 crushed onions
1 crushed tomatoes
1 tsp cumin seeds (zeera)
1 tsp fenugreek seeds (methi dana)
1 tsp mustard seeds
1 tbsp ginger garlic paste
1 tsp salt
1 tsp red chili powder
1 tsp turmeric powder
1 tsp coriander powder
1 tsp cumin powder
1 tsp garam masala

For pakora:
1 cup besan (chickpea flour)
1/2 cup water
1/4 tsp baking soda
1 tsp salt
1 tsp red chili powder
1 tsp turmeric powder
1 tsp cumin seeds (zeera)
1 tsp fenugreek leaves (sookhi methi)
1 tbsp ginger garlic paste
2 diced green chilies
1/4 cup chopped coriander

For tampering (tarka):
1 sliced onion
6 round red chilies
2 diced green chilies
1 tsp cumin seeds (zeera)
1 tsp mustard seeds
1 tsp nigella seeds (kalwanji)
1 tsp fenugreek leaves (sookhi methi)
Optional: 2-3 curry leaves

Method:
1. First make your pakora mix by adding all the ingredients above for pakora, slowly add WARM water to make a paste. Leave aside (10-20 mins).
2. Turn your Instant Pot on Sautee mode. Add ¼ cup oil. We make our kadhi sauce in here.
3. Add the cumin seeds, fenugreek seeds, mustard seeds, red chilies and fry for 1-2 minutes. Add onion paste and continue to stir well for 2 minutes.
4. Add remaining spices for kadhi and fry mixture. Add 1 tbsp of water if needed so spice mix doesn’t stick to the bottom of pot.
5. Now add tomatoes and continue to stir for 5 minutes.
6. In a blender, bring together yogurt and besan with 1/2 cup water.
7. Add yogurt blend to instant pot, stir to mix it all together.
8. Put instant pot on Manual pressure for 20 minutes. Make sure valve on sealing position. Let it naturally release pressure (NPR) after time is up then open carefully.
9. While kadhi is cooking, prepare the pakoras and tampering.
10. Heat up 1/2 cup in a pan oil over medium flame, fry pakora to 1-2 inch in size turning frequently. Should take 5 minutes in total. Keep aside.
11. In the same oil as pakora (you can take some out if a lot is left), add all the tampering items and fry for 2-3 minutes. Keep warm.
12. Open Instant Pot and check consistency of kadhi. If you want it thinner, add water. If not, leave it as is. NOTE: kadhi thickens as it cools down. I added another 1/2 cup water and put it on Sautee mode for 5 minutes.
13. Add pakora and stir gently for 2-3 minutes so all the kadhi soaks into the pakora.
14. Add tampering and stir for 1-2 minutes.
15. Serve hot over basmati rice or with roti, naan, or enjoy it by itself.
