Koyla Chicken Karahi

Chicken ½ kg
Yogurt 375 gm
Whole red chilies 6
Black pepper 1 tsp
Cumin 1 tsp
Whole coriander 1 tbsp
Green cardamoms 2
Fennel 2 tsp
Turmeric powder 1 tsp
Salt 1 tsp
Oil ½ cup
Onion (ground) 1 cup
Ginger garlic 1 tbsp
Coal 1 piece
Onions (sliced) 2
Tomatoes 2
Butter 1 tbsp
Fresh coriander 1 bunch
Green chilies 4

On a tawa pan roast the whole spices and grind well. Then add the grounded spices in the yogurt and mix well. Now add this mixture into the chicken and marinate it well. Then place coal onto the chicken, add butter and cover it for about 20 minutes. Now heat oil in a wok and fry grounded onion, ginger garlic, turmeric powder and salt. Then add marinated chicken, cover and cook well. Once the water is dried cook on a high flame. Now add onions, tomatoes, green chilies and fresh coriander. Cover and cook for another 5 minutes. Lastly dish out and serve hot.

Mutton Chops

Mutton chops 500 gm
Yogurt ½ cup
Tomatoes 2
Green chilies 6
Garlic 8 cloves
Lemon juice 4 tbsp
Cumin (roasted) 2 tbsp
Black pepper (crushed) 1 tbsp
Turmeric powder 1 tsp
Salt 1 tsp
Onions 2
Fresh coriander ½ bunch
Oil ½ cup
Ginger (chopped) as required

In the blender add yogurt, green chilies, black pepper, cumin, garlic and lemon juice. Blend well. Then add this mixture onto the mutton chops and marinate it for about half an hour. Now heat oil and fry the onions. Then add tomatoes, turmeric powder and salt. Cook well. Now add marinated chops and cook properly. Lastly add fresh coriander, chopped ginger. Dish out and serve hot.

Saffron Trifle

Milk 1 liter
Egg yolks 4
Corn flour 1 tbsp
Saffron ½ tsp
Sugar ½ cup
Vanilla essence ½ tsp
Coconut macrons 6
Fruit Cake (sliced) 6
Whipped cream 2 cups
Vanilla custard powder 2 tbsp

In a blender add milk, egg yolks, corn flour, saffron, vanilla essence and vanilla custard powder. Blend well. Then transfer this mixture in the pan and cook on a low flame. Once the mixture become thick add sugar and mix well. Now remove and cool it well. Lastly place fruit cake in a dish, custard mixture, cream and coconut macrons. Serve.
