Laziz Haleem:

Ingredients:
Split chickpeas (soaked) 1/4 cup
Split black gram (soaked) 1/4 cup
Brown lentil (soaked) 2 tbsp
Split gram 2 tbsp
Rice (soaked) 2 tbsp
Barley (soaked) 1/2 cup
Whole wheat (soaked) 1 cup
Bay leaves 2-3
Black cardamom 1-2
Cinnamon stick 2-3
Cumin seeds 1 tsp
Green cardamoms 2-3 pods
Cloves 4-5
Chicken with bones 500 gm
Red chili powder 2 tbsp
Coriander powder 1 tbsp
Turmeric powder 1 tsp
Green chilies (chopped) 2 tbsp
Salt to taste
Yogurt 1/2 cup
Fried onion 3 tbsp
All spice powder 1 tsp
Nutmeg and mace powder ½ tsp
Clarified butter 1/4 cup
Tomatoes 2 medium
Water as required
Black pepper 1 tsp

For the Temper:
Onion thinly (sliced) 1 medium
Clarified butter 2-3 tbsp

For The Garnish:
Fresh coriander (chopped ) ¼ cup
Ginger (julienned) 1 inch
Green chilies (chopped) 1-2
Lemon wedges as required
Chaat masala as required
All spice powder 1 tsp

Method:
In pot, add water, barley, wheat, lentils, rice and bring it to boil, cover and cook till tender approximately: 1 & ½ hour. In wok, add ghee whole all spices. When crackle, add ginger garlic paste, chicken, fry until it changes color. Add tomatoes, red chili powder, coriander powder, turmeric powder, green chilies, salt, yogurt and cook until chicken is done. Add fried onion, mix well, shred cooked chicken and set aside. Blend barley and wheat mixture until smooth, add cooked chicken mix until well combined. Add boiled water if haleem is too thick. Add whole spice powder, nutmeg & mace powder and chaat masala. In frying pan, add clarified butter and onion, fry until golden brown, add fried onion in haleem mixture and mix well. Serve with garnishing.

Loki Gosht:

Ingredients:
Bottle gourd (boiled) 1/2 kg
Mutton (boiled) 1/2 kg
Onion (sliced) 1
Ginger garlic paste 1 tbsp
Tomatoes (chopped) 1 cup
Clarified butter 1/2 cup
Salt to taste
Turmeric powder 1 tsp
Coriander powder 1 tabs
Red chili powder 1tabs
Cumin seeds 1tsp
Black cardamoms 2
Cloves 3
Bay leaf 1
Fresh coriander for garnish

Method:
Add oil in a pan and throw in the whole all spices. Now, add the sliced onion and fry well until nice and golden brown in color. Also add the ginger garlic paste and sauté then Add the mutton pieces and mix well add the chopped tomatoes, salt, red chili powder, turmeric powder, coriander powder and fry everything together until. You will get a lovely Bhuna aroma from the mutton. Then add bottle gourd and mix well with mutton. Close the lid of the pot add 1 cup of water and cook until clarified butter separated. Garnish with chopped coriander leaves .
