Madam. Your method of dosa making excellent.
One point needs clarification: you added hing in the at the inception. Hing contain wheat flour to give body to the powder. This flour will get burnt. Is it not?
Adding a teaspoon of sugar will give nice even browning of restuarant style. What say?
