Peshawari Karahi:
Oil ½ cup
Salt 1½ tsp
Chicken 1 kg
Garlic 5-6 cloves
Ginger 2-3 slices
Water 1 cup
Tomatoes, blanched and skin removed 3
Black peppercorns Few
Tomato puree 1 tbsp
Green chillies, chopped 4-5
Ginger 1”sliced
Black pepper powder ½ tsp
In a karahi heat oil, add chicken and salt. Stir fry till water has evaporated and it is no longer pink. Put ginger and garlic in a sauce pan and add water. Let it boil and soften for about 2 minutes. Strain this ginger garlic water into the wok, discarding the remains of ginger and garlic. Add blanched and chopped tomatoes and crushed peppercorns to the chicken. Keep stirring and cooking till enough water is evaporated. Add tomato puree and mix. Add in chopped green chilies, ginger, ground black pepper and stir and serve.

Danish Cookies:
Salted butter 1 cup
Caster sugar 3/4 cup
Vanilla essence 1 tsp
Eggs 2
Flour 2 cups
Sugar 1 cup
Beat butter and caster sugar, add in vanilla and beat until very light and fluffy. Add in 1 egg. Gradually mix in flour. Form dough into a 3/4″-thick disk. Wrap in plastic and chill until firm, about 2 hours. Roll out on a lightly floured sheet of paper, cut out rounds with large cutter; punch out centers with smaller cutter. Transfer to lined baking sheets, spacing 1 1/2″ apart. Chill 15 minutes. Beat remaining egg with 1 tsp water; brush cookies with egg wash; sprinkle with sugar. Freeze 10 minutes. Bake at 180 degrees C, rotating baking sheets halfway through, until edges are golden brown, 10–15 minutes. Transfer to wire racks; let cool.
